<h2>Water, temperature, and freshness</h2>
<p>Coffee is 98% water, so off-tasting tap water makes off-tasting coffee. If your tap water is drinkable but funky, use a simple filter jug. If it&#x27;s fine, leave it — bottled water is usually a waste.</p>
<p>Boiling water scorches ground coffee. If you pour by hand, let the kettle sit 3060 seconds after boiling (around 9396°C) before pouring. Most automatic machines handle this for you.</p>
<p>Beans are fresh for weeks, not months. Check for a roast date on the bag (not a &#x27;best before&#x27; date). If the bag only has an expiry date a year out, that&#x27;s a sign to try a different roaster or brand.</p>
<h3>Storage: the freezer myth, mostly</h3>
<p>Do not store daily beans in the fridge — they absorb moisture and food smells. An airtight container in a dark cupboard is right for coffee you&#x27;ll finish within two weeks.</p>
<p>Freezing is legitimate only for long-term storage: split into small airtight portions, freeze, and grind straight from frozen. Thawing and refreezing is what ruins beans.</p>
